Deliciously Decadent, Sumptuous and pure indulgence.
This delicious and rare wine is produced from our hillside Viognier vineyard, from fruit harvested at a very, very high level of ripeness (23oBe) - in April 2015.
We only produce this ‘Noble’ dessert wine when the stars align and in 2015 they certainly did - this wine is the best and most sumptuous so far. A small, clean Botrytis infection and a long, warm and dry ripening period allowed the grapes to develop a very high level of sugar and wonderful flavour concentration – but at the same time limiting the volume of juice and therefore wine produced.
‘Noble Botrytis’ mould is responsible for the apricot kernel and honey aromas and flavours, it adds to the desiccation of already shrivelled and intensely sweet grapes and creates the luscious viscous texture.
The 2015 Coombe Farm Noble Viognier displays beautiful varietal honeysuckle and citrus characters that are supported and rounded by the honey and apricot notes from Botrytis. With almost 200 grams per litre of sugar, the wine is decadently rich but also very well balanced, with a fresh, clean acidity.
The wine is ideally matched to golden desserts such as lemon tart or crème brulee or a platter of soft, ripe cheeses. It is liquid gold!
Wine is available as 375mL bottles or a 9 bottle case.
